NouveGnome-Colors icon set is specially designed for Gnome and it can be used with all kind of light and dark themes. nouveGnome-Colors is inspired by nuoveXT. Developer mentioned these icons are still in development process.
You can use Unity Tweak Tool, Gnome-tweak-tool or Ubuntu-Tweak to change icons.
